Darkside of the Grill - Shares his Game Day Brisket Chili Recipe
Nothing beats an epic pot of chili on Super Bowl Sunday! As soon as the crew starts piling in with snacks and beer the smell of this beast hits their noses and they know….. “we’re at the right party!”
I want your Game Day to be its best and my gift to you is the BEST DAMN CHILI you will ever serve!

Side note: this will take 2-3 hours to cook so Place all bets on the game prior to starting this… you don’t want to get caught up in a parlay heater with a chili on the boil! Focus and Don’t Fuck It Up!

This recipe feeds 5-7 (when in doubt add more meat and beans)
What we’re going to need:

-2 white onions
-2 green or red peppers
-4 cloves garlic

-1 can black turtle beans
-1 can crushed tomatoes
-1 can tomato paste
-1 tsp black pepper

Now lets get out that BIG Dutch-oven! Fire up your smoker or get it on the stove and Lets Get It!
Start by tossing some oil in the pot and getting the ground beef browned. Leaving oil in the pot pull the beef out and set aside for later.
Cut up all the onions, garlic, peppers and toss in the hot grease and oil till they soften.
Add 6 cups beef broth, dry goods, Maggie, crushed tomato and paste, bring to boil.
Then turn it down to medium with lid on for half an hour, stirring often.
Add beans, ground beef, reduce heat or start closing those vents on your smoker and go for a half hour stirring often.
Now were going to cube up that smoked brisket into 3/4 inch cubes and toss them in there bringing it down to a simmer.
Let her run at least another half hour on a medium simmer and then rest 5 mins before serving.
Place in bowl and top with cheddar, cilantro, jalapeño and a pinch of raw sweet onion and get ready….. Its about to blow your doors clean off!!!!!!
This is for a “This is for everyone Chili” so add hot sauce to taste! If you all like it spicy by all means toss fresh hot peppers in there and cayenne powder as well while it’s cooking.
Truth be told after a big bowl of this your going to want to find a chair, spark a cigar and sip a nice glass of bourbon…… then get back to swearing at the TV!
